Chicken Mascarpone Marsala
I’ve been trying to cut back on my sugar & that explains my recent posts on savory dishes. Fortunately, it’s a great time to catch up on some savory posts that I have on my list of things to blog. I’ve been wanting to do a Chicken Marsala dish for awhile & upon research I found a Giada recipe that has mascarpone cheese in the sauce. I was immediately sold!!! Oh, how I love mascarpone cheese! It’s like butter & heavy cream together! I’ve only used them on desserts & since I can’t have dessert, I might as well throw it into my lunch!
Every time I make a Giada recipe, I’m always surprised at how authentic it tastes. I’ve tried making Italian dishes so many times & it always ended up tasting inferior (& much more expensive) to a restaurant dish. This Chicken Marsala definitely doesn’t disappoint! The only thing I would change about this recipe is I would double the sauce! The sauce is very tasty & tastes so good on spaghetti, fettucine, & even rice! The mushrooms & chicken soaked up most of the sauce that I was left wanting more of it! In fact, since I have more than half a bottle of Marsala wine left I think I’m gonna pick up another tub of mascarpone & make more sauce for the leftovers!

I had Chicken Marsala for the very first time last week and I was so pleasantly surprised! The presentation in the one I had was sad and very disappointing while yours is worthy of being framed. The next to last photo is my point of view as I am crouched and ready to pounce on my prey! Making Chicken Marsala mine aaaaall mine!
you crack me up with every one of your comments. I haven’t ordered chicken marsala in a very long time. I was actuall disappointed that this wasn’t “burgundy” in color… but the fact that there is a whole tub of mascarpone in it makes me go color blind & full on depend on my sense of taste!
