Crispy Roasted Cornish Hens
Roasted chicken or fried chicken are probably my all-time favorite meals! What I love about this recipe is that you get that crisp skin while avoiding the deep-fryer! This recipe is originally designed for one regular roasting chicken, but lately, I’ve fallen in love with cornish hens! Wings & legs are my favorite parts of the chicken, & when you roast 2 cornish hens, you get 2 pairs of wings & legs to munch on & no one needs to fight over who gets their favorite parts! Smart, huh?
